Shared meals are a firefighter tradition, which leads to some recipes becoming a staple. One of our team members shares their delicious fish taco recipe that can feed an entire single-house crew.
First, brush a hot griddle with oil and brown both sides of a street taco-sized tortilla shell.
For fish, this recipe uses 3 to 4 pounds of flakey white fish, such as cod or mahi mahi. Toss your fish with a teaspoon each of chili powder and garlic salt, 4 tablespoons of olive oil, and the juice of one lime. Marinate for 15 minutes.
Now, homemade chipotle sauce! Combine 1 cup of mayonnaise, 1 tablespoon of honey, two cans of chipotle chiles in adobo, a pinch of salt, and the juice of one lime juice in a food processor and blend until smooth. Refrigerate until ready to serve.
Cook your fish with 2 tablespoons of olive oil in a large skillet over medium heat for 3 to 4 minutes on each side.
Finally, spoon some fish on two stacked tortillas with your chipotle sauce, shredded purple cabbage, cilantro, and Pico de Gallo for a great firehouse dinner!
